Enniatin B is an emerging mycotoxin produced by Fusarium species on grains, as well as on some fruits and vegetables. It has received increasing regulatory attention in recent years. Detected in urine via LC-MS/MS.

Enniatin B is one of the most commonly detected Fusarium mycotoxins in European grain monitoring programs. Its toxicological profile in humans is still being characterized, though animal studies indicate potential cytotoxic effects. Its detection in urine reflects recent dietary exposure.
